When the weather is chilly, nothing hits the spot like a hearty dish to warm you up from the inside out. This creamy, cheesy artichoke dip recipe with spinach uses good-for-you ingredients and extra greens to give you a snack that is both delicious and health conscious. - 8 ounces reduced fat cream cheese
- 2 cups plain, non-fat Greek yogurt
- 2 tablespoons butter
- 1½ cups grated Parmesan cheese
- 2 cups chopped artichoke hearts (about 1 large can, drained)
- 2 cups spinach
- 4 diced and deseeded jalapenos
- 3 garlic cloves, minced
- 1–2 drops Marjoram essential oil
INSTRUCTIONS
- In a medium pot, mix together the cream cheese, Greek yogurt, butter, and Parmesan cheese over medium heat, uncovered. Stir frequently until ingredients are melted and have a smooth, even consistency.
- Add in the chopped artichoke hearts, jalapenos, and spinach, and stir in until evenly distributed in the mixture.
- Stir in the garlic cloves and Marjoram oil.
- Allow to cool slightly before transferring carefully into a heatproof dish and serve with pita chips or bread.
Tip: For an extra melty artichoke dip, add a generous grating of Parmesan cheese to the top of your dish and finish off the cooking process in a 190o C oven for 2-5 minutes.
