Homemade baked goods are a special treat! Not only are they are fun to make either on your own or as a family, but you also get to dig into some sweet goodies right when the oven timer goes off. Not to mention it fills the whole house with the most mouth-watering smells—who doesn’t want their home smelling like freshly baked cake? Honestly, we’re drooling just thinking about it. But just when you thought aromas of baking couldn’t get any better, we put a fragrant twist on vanilla cupcakes by including Lavender essential oil.
Shh... don’t worry! When your family begs you for your secret ingredient, we won’t let it slip.
SUPPLIES
- 2 ¾ cups cake flour
- 1 2/3 cups granulated sugar
- 1 tablespoon baking powder
- ¾ teaspoon sea salt
- ¾ cup butter, softened
- 4 large egg whites, plus 1 whole large egg
- 1 cup whole milk
- 2 teaspoons vanilla extract
- 1-2 drops Lavender essential oil
INSTRUCTIONS
- Preheat oven to 176°C and prepare a muffin tin with cupcake liners.
- Mix dry ingredients (flour, sugar, baking powder, and salt) until evenly combined.
- Add the softened butter and combine using a mixer or hand beater on low speed until well incorporated. The mixture should have a slightly crumbly texture.
- Add egg whites one at a time, beating well and scraping the sides of the bowl after each one. Then add the whole egg and combine well with a mixer.
- In a small bowl, whisk milk with vanilla and Lavender essential oil.
- Add milk mixture to the batter ⅓ cup at a time, beating for 1 to 2 minutes after each addition, until fluffy.
- Pour batter into prepared pans and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from oven and cool completely on a wire rack.
