Chocolate Chip Cookie Recipe with Spearmint Essential Oil

When the weather outside is frightful, the most delightful remedy is a plate of freshly baked cookies. We think this tasty chocolate chip cookie recipe will hit just the spot, but with a delicious twist. While we all look forward to warm, gooey chocolate chip cookies, no one said we can’t also enjoy a touch of cool, wintery flavor. For our chocolate chip cookie recipe, we included Spearmint essential oil for a bit of added minty goodness.

Ingredients

Wet

• ½ cup coconut oil, refrigerated
• ½ cup butter
• ¾ cup raw sugar
• ½ cup honey
• 1 teaspoon cocoa
• 1 tablespoon molasses
• 1 egg
• 2 drops Spearmint oil

Dry

• 1 ½ cup spelt flour
• 1 ½ cup soft white wheat flour
• 1 cup quick oats
• ¼ cup chia seeds
• 1 teaspoon baking soda
• ½ teaspoon salt
• 1 cup chocolate chips

Instructions

1. Combine refrigerated coconut oil and butter in a mixing bowl and whisk until smooth.
2. Once smooth, add raw sugar, honey, cocoa, molasses, Spearmint essential oil, and egg, mix until creamed together.
3. In a separate bowl combine spelt flour, soft white wheat flour, quick oats, chia seeds, baking soda, and salt. Then gradually add the dry ingredients into the liquid mixture while mixing.
4. Add one cup of chocolate chips and mix.
5. Scoop 12 cookies onto a lightly oiled cookie sheet and bake for 12 minutes at 175° C
