Spice oils come from the root, stem, seed, fruit, or bark of the plants, which means that Black Pepper, Cardamom, Cassia, Cinnamon Bark, Clove, Coriander, Fennel, Ginger, and Juniper Berry all fall under the spice category.
Like herb oils, spice oils are all steam-distilled. The part of a plant that each oil comes from varies, however, which is why we included the plant part in individual descriptions of the oil.
The most obvious use for spice oils is in cooking. However, these are potent oils, so all that's needed in most instances is a toothpick's amount. Cooking with these essential oils helps enhance the flavors in any dish and carries over some of their benefits.
